While most of the world dries coffee down to 11 or 12 percent moisture before hulling, Indonesia pioneered a distinct tradition: Giling Basah. The process is an art of its own. Freshly pulped cherries are dried only briefly before being hulled while the beans remain remarkably wet typically at 30 to 40 percent moisture and are then laid out to dry a second time. Stripping away the parchment from such damp beans alters the core chemistry of the coffee.
