Hand-picking the perfect fruit
The journey starts at the farm, where fully ripe coffee cherries are selectively hand-picked to achieve natural sweetness and more complex flavour profiles.
Extracting and preparing the seed
Within hours of harvest, the cherries are processed using washed, natural, or honey methods to control fermentation and reveal the character of the coffee seed.
Locking in flavour and stability
The beans are carefully dried on raised beds or patios and turned consistently until they reach the moisture level required for safe storage and transportation.
Revealing the green bean
After resting and drying, the coffee passes through the mill, where the parchment layer is removed to reveal the raw, unroasted green bean.
Ensuring export quality
Green beans are sorted by size, weight, colour, and defects before being packed into protective bags and prepared for shipment to international buyers.
A distinctive Indonesian approach to body, depth, and flavour.
While most coffee-producing regions dry coffee to approximately 11–12% moisture before hulling, Indonesia developed the distinctive tradition of Giling Basah. Freshly pulped coffee is partially dried, hulled while its moisture remains relatively high, and then dried for a second time. Removing the parchment at this stage influences the bean’s structure and contributes to the low acidity, full body, and deep earthy or savoury character often associated with Indonesian coffee—a recognisable expression of its origin.
